US Virgin Islands - St. John, Cinnamon Bay

Amazing botanical surroundings await the traveler along with spectacular sea life, vast beach activities like kayaking, windsurfing, diving, snorkeling or swimming through brilliant coral reefs teaming with tropical marine life.

Coconut-Shrimp Soup
1/2 lb. shrimp, peeled - 1 c. coconut milk - 3 garlic cloves - 1/2 tsp. roasted coriander seeds - 1 c. chicken stock - 1/2 lime, zested - 1 1/2 piece fresh ginger, shredded - 1 sprig lemon grass - 1/4 hot pepper, seeded - 1 sprig basil, finely chopped - - Bring all ingredients to a boil except for shrimp and basil.  Simmer for 15 minutes.  Add shrimp and cook for 3 minutes.  Garnish with fresh basil.  Serves 2
