Blackbeard's Castle, St. Thomas Skytsborg Tower (meaning sky tower), was built in 1679 by the Danes as a watchtower for the harbor of Charlotte Amalie.  It is located at the highest point on Skytsborg Tower Government Hill.  Danish Soldiers used Skytsborg as a vantage point to spot enemy ships and protect impressive Fort Christian from attacks.

Fort Christian is at sea level, which was ideal for warding off attackers with canon fire, but did not offer a good enough view of the incoming ships before they entered the harbor.  It is not known what year Skytsborg Tower took on the name of Blackbeard's Castle, but the infamous Edward Teach, commonly known as Blackbeard the Pirate, did sail the Caribbean waters in the early 1700s.

It has become part of the lore of the island that he used the Tower as a vantage point for his own treacherous purposes.  Blackbeard's Castle is one of four National Historic sites in the US Virgin Islands.

Spectacular view of Charlotte Amalie Harbor at night, with cruise ships lit brilliantly is a phenomenal sight to see.  St. Thomas is a port definitely worth visiting.  The sunsets are a must see for all.

Taste O' The Tropics Rum Punch
Serves 20-24

1 bottle (750 ml) light rum
3/4 cup pineapple juice
juice of 6 oranges
juice of 6 limes
1 cup confectioners sugar
1 1/2 quarts ginger ale
orange slice and/or maraschino cherries for garnish

In a large punch bowl, combine rum, pineapple juice, juice of oranges, juice of limes and confectioners sugar.  Add ginger ale just before serving.  Chill. server over ice in glasses and garnish.

Callaloo Soup
(Serves 6 to 8)

1 lb. Spinach leaves, chopped
12 small okra
4 ounces, cubed lean ham
4 ounces shrimps
1/2 lb. Crab meat
3 sprigs fresh parsley chopped
1 stalk celery with leaves shopped
4 scallions chopped using white and green parts
1/4 tsp. dried thyme
freshly ground black pepper (to taste)
6 cups water.

Put all ingredients into a pot, cover and simmer for one hour.

Coconut-Shrimp Soup
1/2 lb. shrimp, peeled - 1 c. coconut milk - 3 garlic cloves - 1/2 tsp. roasted coriander seeds - 1 c. chicken stock - 1/2 lime, zested - 1 1/2 piece fresh ginger, shredded - 1 sprig lemon grass - 1/4 hot pepper, seeded - 1 sprig basil, finely chopped - - Bring all ingredients to a boil except for shrimp and basil.  Simmer for 15 minutes.  Add shrimp and cook for 3 minutes.  Garnish with fresh basil.  Serves 2

A world-class destination!  Charlotte Amalie, named for a Danish Queen is the capital of the United States Virgin Islands and the most famous cruise port in the Caribbean.  Emerald hills set as a backdrop to the white and pastel houses, old Danish warehouse buildings and the first class shopping area add to the enchantment of this lovely destination.

Pirated Thyme-Mustard Sauce
3 tbsp. fresh thyme leaves - 1/4 cup Dijon-style mustard - 3/4 cup heavy cream - 1/8 tsp. white petter - In a small bowl, combine all ingredients.  Before serving, warm the mustard sauce in microwave until it is hot.

Government House has been the center of government in St. Thomas since the mid-1860's.

The back also has a recipe for Curried Pumpkin Soup (Serves 6 to 8)
1 onion, chopped, 3 cloves garlic, minced, 3 Tbsp. curry powder, or to taste, 1/2 C dried yellow or green lentils, 3 1/2 C chicken broth, 3 (16 ounce) cans pumpkin, 1 1/2 C milk, salt and pepper to taste.

Saute onion and garlic in butter until soft.  Stir in next 4 ingredients.  Bring to a boil, reduce heat, cover and simmer for 35 to 40 minutes, or until lentils are tender.  Puree ingredients in a blender, then reheat to nearly boiling.  Stir in milk and season to taste.

Saint Thomas is an island in the Caribbean Sea and part of the United States Virgin Islands. Located on the island is the territorial capital and port of Charlotte Amalie.

As of the 2010 census, the population of Saint Thomas was 51,634.

St. John is an island in the Caribbean Sea and a constituent district of the United States Virgin Islands (USVI), an unincorporated territory of the United States.

It is 50.8 km² (19.61 sq mi) in area with a population of 4,170 (2010 census).

Because there are no airports on St. John, the only access to the island is by boat. The ferry service runs hourly from St. Thomas and daily from Tortola; regular ferries also operate from Virgin Gorda, Jost Van Dyke and Anegada. Approximately 60% of the island is protected as Virgin Islands National Park.
