Jamaica - Ocho Rios, Dunn's River Falls

Dunn's River Falls, Ocho Rios, Jamaica

One of Jamaica's natural treasures, the Spaniards called the area "Las Chorreras", over the years the name has changed to "Ocho Rios" (meaning eight rivers)  the waterfalls are the most splendid spot on the island.  Terraces and decks permit visitors to enjoy the scenic vistas of the falls and the horizon beyond.

Banana-Vanilla Muffins
1 1/4 c. mashed bananas - 1 egg, beaten - 3/4 c. granulated sugar - 1/2 c. butter 1/2 tsp. vanilla - 1 tsp. baking soda - 1 1/2 c. flour - - Preheat oven to 350 degrees. Combine bananas, egg, sugar, butter and vanilla.  Dissolve baking soda in 1 tsp. of hot water and add to mixture.  Mix until creamy.  Add the flour and lightly mix.  Bake for 20 minutes or until golden brown.  Serves 4
