Conch Fritters
1 lb. conch, cleaned, pounded and cut into 1/4 inch pieces - 1 egg, beaten - 12 oz. flour sifted - 1/2 oz. baking powder - dash hot sauce - 2 onions, minced - 2 celery stalks, minced - 2 green bell peppers, minced - dash salt - dash freshly ground pepper - vegetable oil, for frying - - Make a stiff batter with egg, flour, baking powder, seasoning and a little water. Mix in additional ingredients and let batter rest for 15 minutes. Deep fry fritters in vegetable oil until golden. Makes 18 fritters. (I wonder if the baking powder should read 1/2 tsp??)
